Huit5Quatre offers a rare and intimate gastronomical experience. Nestled in a Scandinavian decor in the heart of Eastman, this human-sized table d’hôte is managed François and Laura, whose warm welcome transforms every meal into an unforgettable moment. There is only one seating, a limited number of guests and a surprise menu created by chef François Lessard, a French trained chef inspired by Canada’s West Coast. Featuring local ingredients sourced within a 30-km radius, each dish celebrates the season and pays tribute to creativity. Soft lights, carefully chosen wines, a slow pace… here, guests take the time to savour, to connect and to live an authentic dining experience.
